Regional information: Sourced from higher-altitude vineyards in the Haute Vallée de l'Aude, around the town of Limoux, this Pinot Noir grows in one of the most distinctive cool-climate areas of the Languedoc. The vineyards sit in the foothills of the Pyrenees, where four climatic influences (Atlantic, Mediterranean, Autan and Pyrenean) converge to create ideal conditions for slow, balanced ripening. The combination of warm, sunny days and cool nights results in wines of exceptional freshness and purity.
Vinification details: The Pinot Noir grapes were hand-picked during the early hours of the morning in late August to early September, when temperatures are at their coolest. This careful timing helps preserve the grapes' natural acidity, delicate aromatics, and bright fruit character. Grapes were transported quickly to the cellar in small, ventilated crates to prevent oxidation and preserve quality.
