Harvested and sorted by hand. Cold pre-fermentation maceration followed by traditional vinification in the thermo-regulated stainless steel vats to preserve the freshness and delicate aromas of red fruit. The N7 Sancerre Rouge is the result of careful maturing adapted to the three terroirs of Sancerre to emphasise the smoothness and power of the chalky clay terroir, the fruit and freshness of the limestone, and the minerality of the flint. Lengthy ageing of 12 months (70% in vat and 30% in 400 litre oak casks), and 18 months in bottle in our cellars enables the tannins to fully integrate the wine and highlight the aromatic intensity and freshness of Pinot Noir.
