We asked our brewers to unlock their silly sides and come up with something extra playful for this Tasman IPA. Like the rest of the Tasman series, we expected they'd use three hops, however being true goofballs, they’ve decided on five! What they’ve created is a vibrant fruit punch profile that still has the resinous middle we’re trying to perfect with this technique.
For the science bit: Tasman IPA’s have reduced kettle hop additions, thus reducing base bitterness. The dry hops are added individually for predetermined contact times and completely removed before the next variety is added. This contact time, between 12-48 hours depending on hop variety, is considerably shorter than traditional IPA’s. This creates an ultra clean hop profile.
For the flavour bit: Columbus provides earthy undertones and a piney finish, whilst Citra and Vic Secret add a juicy middle complete with papaya, pineapple and passionfruit. Large additions of Centennial and Cryo Ekuanot before packaging add top notes of grapefruit, orange peel and lemon zest.
