It’s the season to indulge, so we hit up our buddy Diogo from Tuga Pastries in Sydney to whip up something awesome. A decadently rich Easter stout. We took our bold imperial stout base and slammed it together with their legendary hot cross buns. Tuga’s got the goods, blending Diogo’s late Father's classic Portuguese baking recipes with a fresh, modern kick.
We dissolved 100kg of buns in the hot wort creating a complex dessert stout infused with dried fruit, mixed spice and orange peel with hints of sweet bread and spiced aniseed glaze. Perfect for an Easter weekend breakfast.
