North British 15 Year Old 2009, part of the Signatory 100-Proof Grain Edition #2, bottled in 2025. This single grain Scotch whisky enjoyed a dual maturation in 1st & 2nd Fill Oloroso Sherry Butts and Bourbon Barrels, yielding a vibrant interplay of rich fruit, creamy vanilla, and subtle spice. Bottled at 100 Proof (50% ABV), each sip reveals the distillery’s hallmark grain smoothness enhanced by layers of indulgent sherry and bourbon-cask depth.
Signatory Vintage Scotch is one of the most discerning independent bottlers of Scotch in the world. They bottle one cask at a time, capitalizing on the unique colour and flavour characteristics of each individual cask.
By sourcing all-natural malts from the best distilleries in Scotland, selecting the best single batches and bottling only the finest casks within those batches. The resulting “single, single, single malt” this is about as exclusive it gets.
About North British
Practically crowd-funded to provide an alternative source of grain, North British is today jointly owned by two of Scotland's largest distillers.
The North British (the archaic and somewhat disparaging term applied to post-Jacobite Scotland) distillery was founded in Edinburgh in 1885. Up until that point, Scotland’s blenders and spirit merchants could only buy their grain from DCL [see Cameronbridge]. In an attempt to break the monopoly, Andrew Usher, William Sanderson, John Crabbie and James Watson joined forces to build a new – and substantial – grain distillery in Gorgie, close to the Union Canal, the railway line, and the Caledonian distillery which had been absorbed into DCL the year before. A case of the last straw perhaps?
Production started in 1887 from a single Coffey. Within three years capacity had doubled to three million gallons a year. Whisky-making ceased during the First World War, but production restarted in 1920. It was nursed cautiously through the tricky period of the 1930s, but blossomed once more post-WWII. By the 1960s it was making six million gallons a year (a figure which would double by the start of the following decade), and for a period, North British was the largest grain plant in Scotland.
By the 1960s it was still being run as a kind of co-operative with its shareholders including Robertson & Baxter, IDV, William Lawson, Macdonald Martin, Seagram and William Teacher. In 1993 its management was taken over by Lothian Distillers, an equal partnership between R&B [now Edrington Group] and IDV. The result of the merger between the latter and DCL (by that time called UD) in 1997, meant that North British was being jointly run by the firm which it had set up in opposition to.
About Signatory Vintage
Perthshire-based independent bottler and owner of Edradour distillery. Signatory is an independent bottler with a vigorous release policy, and usually some 50 different single malt expressions are available at any one time. Whiskies are bottled across a number of ranges, including the Un-chill Filtered Collection, the Cask Strength Collection and the Single Grain Collection.
Signatory bottling, bonding and office facilities are located in a building adjacent to Edradour distillery, near Pitlochry in Perthshire, which the company also owns. Signatory Vintage Scotch Whisky was established in 1988 by Andrew Symington, who had previously managed the prestigious Prestonfield House Hotel in Edinburgh. The first cask bottled by Symington was a 1968 Sherry-cask-matured Glenlivet.
Signatory was initially based in the Newhaven area of Edinburgh, where a bottling plant was developed, but in 2002 the firm acquired Edradour distillery from Pernod Ricard, and subsequently moved all of its operations north to the picturesque Perthshire location.
A new bottling plant and a warehousing complex were constructed, strictly in keeping with the vernacular architectural style which prevails at the much-visited and diminutive former farm distillery.
