We selected this coffee because it features caramel, citrus, cherry and chocolate notes that we all enjoy in the cup.
Grown by Maya Indian farmers in the highlands of Chiapas, Mexico, this coffee is brought to us by a cooperative of approximately 70 producers, 50 of whom are women. The cooperative was founded by Rosalba Cifuentes Tovia of the Mayan community in Bella Vista, Chiapas. It aims to pay producers a higher premium than is typically offered in the region, with the goal of improving quality and creating a more sustainable venture for the community.
It is decaffeinated using organic MC (methylene chloride), which is a compound that occurs naturally in oceans and algae, as well as in the soil near volcanoes, like El Chichón located northwest of Chiapas.
